Ingredients
4 ounce / ½ cup cream cheese, softened
2 Tbsp honey
16 – 18 medjool dates
4 Tbsp crushed nuts (I used a combination of pistachios, almonds, and walnuts)


Instructions
1. Place the softened cream cheese and honey in a medium-sized bowl. Beat with an electric hand mixer for about 30 seconds – 1 minute, until smooth and creamy. Place in the refrigerator for about 10 minutes, until chilled.
2. Pit the dates. Carefully slice the dates lengthwise with a sharp paring knife, and then remove the seed. Set the date aside.
3. Fill the dates with the cream cheese using a piping bag and a round nozzle. (In case a piping bag isn’t available, it’s possible to use a Ziploc bag – just snip off the end, and fill with the cream cheese mixture and pipe.) It’s also possible to skip the piping and fill the dates with a small teaspoon.
4. Place the crushed nuts in a small bowl. Place one date, cream cheese top down, in the crushed nuts. Then turn them around and place them in a serving bowl or platter. Do the same for all the dates.
Serve right away.
