Masala fish curry

Recipe by Ruda Khan 

Ingredients:
Fish (Rohu, Cod, Tilapia) – 500 gms

For marination:

  • Turmeric powder- 1/4 tsp
  • Red Chilli Powder- 1 tsp
  • Salt- 3/4 tsp

For Masala gravy:

  • Garlic-Ginger paste 1 1/2 tbsp
  • Onion paste of 1/2 medium size
  • Tomato paste of 1 big tomato
  • Red Chilli Powder- 1.5 tsp
  • Kashmiri red Chilli powder -1 tsp
  • Cumin powder – 1 tsp
  • Coriander Powder- 1.5 tsp
  • Turmeric Powder- 1/4 tsp
  • Garam masala powder – 1 tsp
  • Kasuri Methi (dried Fenugreek leaves)- 1 tsp
  • Salt to taste and Cilantro leaves for garnishing

Method:

  • Clean, wash and pat dry the fish pieces. Add the turmeric, red chilli powder, salt and mix well. Set aside for 15 mins.
  • To pan-fry the marinated fish, add oil to a frying pan and place the fish pieces side by side.
  • Fry on medium heat for 1 min and turn it on the other side. Continue to fry on medium heat for 2 more mins on other side. Take these out on a plate.
  • Heat oil in a flat pan or kadai.
  • Add the onion paste and fry on medium heat for 7-8 mins till light brown in colour.
  • Now add the tomato paste and add 1/2 tsp salt to it and continue to fry on medium heat for 3 mins till water dries up and oil separates.
  • Add all the spices and continue to sauté for another minute, add 1/2 cup water, cover and cook for 7-8 mins on medium low heat.
  • After 7-8 mins, Lower the heat and place the fried fish pieces side by side and cover & cook on low heat for 5 mins again, if more water is required you can add at this stage.
  • Garnish with the chopped cilantro leaves and Serve with rice or roti.
